Instructions
  1. Get out all your equipment & ingredients ready to cook. Place a large fry pan (or griddle pan) on high heat and set the oven GRILL at 240C/ 475F/ GAS 9.
  2. Give the sweet potatoes a good wash in the colander. Cut into small wedges and place in a large microwave friendly bowl. Cover with a double layer of cling form and cook in the microwave for around 8-minutes, or until softened. Meanwhile...

  3. Lay the chicken out on a piece of greaseproof paper. Pick over HALF the thyme leaves, grate over the lemon zest with the fine grater and season with salt and pepper. Cover with the greaseproof paper. Bash to around 1 cm thickness, with the rolling pin or small sauce pan.

  4. Add a splash of olive oil to the large fry pan (or griddle pan) and place in the chicken and prosciutto. Fry for around 4-5minutes on each side, or until the chicken has cooked through and the prosciutto is crispy

  5. Cut the avocado in half and squeeze the flesh into a mixing bowl, (discarding the seed). Cut the lemon in half, squeeze in the juice of half, crush in the garlic cloves and season to taste with a little salt and pepper. Mash everything together with a fork to make the guacamole.

  6. Tip the natural yorhurt into a small serving bowl, along with the dijon mustard and white wine vinegar. Crush in the remaining garlic clove, season to taste with a little salt and pepper and mix everything together with a fork, to make the mustard aioli.

  7. Turn the chicken over with the tongs and remove the prosciutto when it's crispy. Keep frying until cooked through. Meanwhile...
  8. When the sweet potatoes have softened, remove them from the microwave and place on a medium oven tray. Season with salt and pepper, pick over the remaining thyme leaves and add a splash of olive oil. Place in the oven on the top shelf, for around 6-7-minutes, or until slightly crispy. Meanwhile...

  10. Lay the slices of bread out on the griddle pan (or fry pan) to toast evenly on both sides. You may need to do this in batches.

  11. Squeeze the remaining half lemon into the salad bowl, add a splash of olive oil and season to taste with salt and pepper. Give the rocket leaves a quick wash in the colander and shake dry. Tip the leaves into the salad bowl and toss to coat.

  12. When the bread has toasted, spread the avocado over the bases, Layer on the rocket leaves, the chicken and crispy prosciutto.

  13. When the sweet potato wedges are slightly crispy, remove them from the oven. Spread the club sandwich lids with the mustard aloili and serve with the sweet potato wedges.
