It is the flag ship of any Christmas lunch or dinner and always provides for plenty of leftovers.

Many people shy away from a whole turkey because they feel it's too tricky to cook to achieve that amazing crispy skin and beautiful moist meat.

That's what I thought until I created this simple step-by-step recipe.

It's all about the 'butter'.

You can swap heavy fatty butter with lighter full flavored lactose free butter.

The flavour is all in the herbs that drip down through the breast as it cooks, to make it beautiful & succulent.

I'm an Aussie boy, (Tasmanian and proud of it), so I am always going to choose lamb...because it's Australian!

With the fat trimmed off lamb, it is the lighter, full-flavoured, lower calorie and healthier choice.

This lamb recipe is full of herbs and stuffing topped off with an amazing gravy.

Again so simple and quick to prepare the day before all in 15-minutes.

Its hard to go past a traditional fruit pudding, but to lighten up your Christmas dessert, go for this fruit salad.

Cherries keep in with the deep Christmas flavours, the watermelon is so super light and succulent, while the mixed berry sorbet is full of antioxidant goodness.

Simply whiz up the sorbet the day before in 2-minutes with the help of food processor.
